A new study says the common belief that red meat is linked to certain health problems is not based on strong evidence.  A team at the University of Washington looked at the scientific data linking red meat consumption to problems like cancer, heart disease and strike and say it was too weak to support those claims.   Fond du Lac County Public Health Officer Kim Mueller says it’s not about the consumption of red meat.  “That is something humans have consumed forever, but it’s all the other factors that go into what is that person consuming,”  Mueller told WFDL news.  Nearly all research is observational, plagued by confounding variables.  For example,  perhaps meat eaters simply eat fewer vegetables, or tend to smoke more, or exercise less?  In the study the team created a better burden of proof of risk function.  The team hopes that can help others evaluate whether foods and actions associated with health risks have been backed up with evidence.
